Vegan Buffalo Cauliflower ” Wings”.

Hi everyone! How have you all been? I have been doing well. Looking for a healthy ( kind) way to enjoy chicken wings? Look no further!  I have decided to share one of my favorite vegan recipes with you all. I first tried this recipe 2 years ago at the beginning of my vegan journey. This recipe can convert any cauliflower hates ( I was one!). I remember as a little kid I HATED cauliflower and I wasn’t even a picky eater… hell I loved mushrooms and everything else except for cauliflower. This recipe made cauliflower a favorite veggie!Make these ” wings” for game day! ( Or any day like a do!) these are perfect and satisfy my wing craving… Make these to go with your vegan pizza! It is very hot/spicy but if you add lots of vegan butter or use a sauce like BBQ or sweet n sour it would be better for people that do not like spice.Best served with vegan ranch. Now for the recipe!



1 Large/ medium cauliflower

1 Cup flour ( even gluten free will work!)

1/2 Non dairy milk unsweetened* Make sure it is plain. Almond or soy work best. ( or sub water )

1/2 water

3 Cloves garlic, chopped

1/2 teaspoon salt

1/2 Chili powder

1 Tablespoon oil or melted vegan butter

1 cup hot sauce or other sauce of your choice

Vegan butter make sauce less spicy ( optional) I used olive oil and it worked!

Vegan ranch homemade or store bought. I like Follow Your Heart High Omega 3 Vegan Ranch. ( optional )



Step 6: Preheat oven to 425

Step 2: Clean your head of cauliflower and cut the stem/ leaves off

Step 3: Cut your cauliflower into medium sized pieces and set aside.

Step 4: Rewash cauliflower and set aside.

Step 5: Combine flour, nondairy milk, water, salt, chili power, and oil/ vegan butter in a mixing bowl and mix. You  may need to add more eater but pour slowly, the batter shouldn’t be too thick or too runny. (Do not add hot sauce yet!)

Step 6: Coat all the cauliflower in batter and put on a parchment paper lined baking sheet ( if you are out oil and tin foil works for me)

Step 7: Bake for 25- 30 minutes

Step 8: Mix oil or vegan butter to taste. Microwave for 20-30 seconds or until warm.

Step 9: Toss in sauce and bake for another 10-12 minutes ( make sure to check on them your oven may be hotter than mine!)

Step 10: Devour them with your feet up while binge watch Netflix.

Easy Vegan/Vegetarian Meal Ideas.

Hi everyone! I hope you’re all well! I have been busy with school lately so I have not had a lot of time for cooking. A lot of people think that if you are a vegan or a vegetarian you

A: That you have to cook everything you eat

B: That you have to eat nasty, weird foods.


C: That you have to spent hours and hours preparing odd, (expensive) ingredents just to make one (nasty) dish.


I am here to probe all of those people wrong!

Just because your a vegan, vegetarian, or just trying to eat less meat doesnt mean you have to miss out on delicious food. I would also clear up the misconception that only “rich” or well off people can afford this lifestyle! It can be as cheap (or expensive) as you make it. If you live off pre-made foods, meat/cheese substitutes it will be more expensive than eating home cooked food.

Lets get into the recipes/meal ideas!


Meal 1 pasta with marinara (vegan): This recipe is pretty self explanatory… Just take your pasta of choice such as penne or spaghetti and add sauce! ( most pasta is vegan). It does not even have to be marinara sauce just use what you like! You can add toppings like parsley, basil, real or vegan cheese.

Meal 2 one pot pasta alla puttanesca (vegan): This recipe is perfect for any days that are just… crazy. It only requires one pot, you don’t even have to drain the water because the sauce cooks it! It is also very cheap to make.


About 1/4 of a package of spaghetti

1 cup of canned tomato sauce ( NOT JARRED)

2 1/3 cup of water

2-3 cloves of garlic, minced

About 1/4 cup of black olives (more or less to taste)

2 tablespoons of capers, chopped

2 tablespoons of extra virgin olive oil

Salt (to taste)

Parsley ( optional )



Put the water, tomato sauce, water, chopped garlic, salt, and olive oil in a pan.

Bring the mixture to a boil.

Add the pasta, capers, and black olive slices to the pan of boiling sauce.

Cook pasta until the sauce is thick and mostly absorbed.

Serve! I garnished mine with basil, but parsley would have been way better.


Meal Idea 3 Deep Fried Tofu with Veggies (vegan):

This recipe/ meal is amazing. I think it is my new favorite. It is so flavorful, crispy on the outside and soft on the inside. It is SO simple to make. It usually takes a LONG time to get tofu crispy but this recipe only takes a few minutes!


3/4 A block of firm tofu, drained*

1/3 cup of cornstarch

2.5 Tablespoons of nutritional yeast

Salt to taste

1/4 Teaspoon of chili powder

Pepper to taste

2 Tablespoons of liquid amino or soy sauce

1/3 bag of your favorite frozen vegetables ( I used soycatoush from Trader Joe’s)

At least 1/2 cup oil for frying



Drain tofu and wrap it in a towel, apply light pressure and leave it for like 20 minutes.

Once tofu is drained slice it into cubes or rectangles.

Mix all the dry ingredients together

Dip tofu in liquid amino or soy sauce to coat it.

Dip tofu in dry ingredients.

Deep fry tofu in the hot oil and turn when necessary.

Placed fried tofu on paper towels and pat.

Serve tofu with veggies!
Meal Idea 3 Veggie Burgers:

These can be both vegan or vegetarian. You can find veggie burgers in the supermarket, some fast food chains, and restaurants. My favorite one is an Earth burger from Silvergreens on a brioche bun with cheese. I also like the Westsoy brand and that can be found at Whole Foods! 
Snack Idea fresh fruit (vegan):

Self explanatory… Just eat it whole or slice it up like I did! This is Mexican mangos and blackberries.




What I Eat Vegetarian.

Hi everyone! How have you all been? I have been well. I have not been eating much because my wisdom teeth have been causing so much pain. But! I what I have been eating has been delicious! It has been pretty junky though! What good stuff have you all eaten lately? Let me know! Also sorry I do not have pictures of everything I am sharing with you all!



Citrus poppy seed muffin from a local bakery (Jeannine’s): this was really good and filing. It was also soft enough so I did not hurt my mouth. It was sweet, lemony, moist, and the poppy seeds added great texture.

Vanilla latte from The French Press : One of my favorite lattes! Really smooth, flavorful, creamy, and just absolutely perfectly made. I had it with the citrus poppy seed muffin for breakfast. It perfectly complement the muffin! Not to mention I need caffeine to get through the day and not go completely crazy!

Bagels: Bagels are easy, fast, and cheap. I like them plain, with cream cheese, and also with organic jelly.



Side of Mac n Cheese from The Shop: It only is $5 and its a big portion for me. It is really good and is very,very filling. It needs a little for cheesy flavor and salt though. I get this with an iced vanilla latte.

Iced Vanilla Latte: I get a coffee almost everyday. I get this one from The Shop and its really good. They get their coffee from one of my favorite coffee shop ( Handlebar). It is a really good midday pick me up. It is my favorite iced coffee.

Pizza Veggie Burger (I got mine at Trader Joe’s): These are pretty good. They taste like pizza flavored chips/ snacks. I had mine on a toasted bagel.



Pasta with olive oil, salt, pepper, garlic, and sun dried tomatoes: This is really good and easy to make. You just cook the pasta and then add the cooked garlic and other ingredients. The sun dried tomatoes add a meaty, salty flavor.



Gluten Free Raspberry Chocolate Mousse Cake (Lilac Patisserie): This is so amazing! No one would know it was gluten free. It is the best bakery cake I have ever had!

Vanilla Latte ( Lilac Patisserie): So good! Another one of my favorites.

Festival Adventures.

Hi I hope you’re all well! What have you all been up to? Let me know! This past weekend was the Earth Day Festival in Santa Barbara, Ca. Since I live here I decided to check it out! I had a ton of fun with my boyfriend. Even though it was super hot (like 90 degrees we still had a lot of fun)! and after we went back to his place for a family dinner. There was a lot of stuff and I will let you know all about it!

Saturday 4/16/16: 

Day one of the Earth Day festival! I had o pop by the store first and than my boyfriend texted me about dinner so I picked up a cheesecake from Trader Joe’s. I got the chocolate sampler kinds. After that I rushed over to the earth day festival. When i first arrived I saw tons of dogs, people, and tents. I noticed that my favorite vegan dairy free brand So Delicious was there so I screamed and Ran over. They were giving away free samples of their dairy free products! I got the Mocha Almond Fudge mini and my boyfriend got the coconut milk ice cream sandwich. They were both amazing! I think that they are my new favorite vegan ice cream! After this we walked around and got some more food. We got some really yummy blood orange lemonade. it was great because it was flavorful and not too sweet.  We also had the chance to meet some animal rights activists and they talked to us about veganism. I learned a lot.For example the best restaurants in town, where and when vegan meetups are, and I also received some literature. I got a Vegan Starter Kit from Peta. It has recipes, why you should go vegan, and just other basic information about veganism. After that we walked around and got some treats. I got some vegan Jalapeno “Jack” popcorn from the Santa Barbara Popcorn Company. We walked around a bit longer then went home to get ready for family dinner. I wore a grey T-shirt dress, flannel, and converse. When I arrived for dinner we cleaned up a bit, watched Parks and Rec, and then made a fire. For dinner we ate grilled pineapple skewers, rosemary potatoes, and vegetables ( they had chicken but I’m a vegetarian). After that we had dessert. There was ice cream, pie, and cheesecake.


Sunday 4/17/16

I woke up and got ready for day two of the Earth Day Festival. I decided to take me mom so we could all spend time together. We walked around and meet my boyfriend. It was very hot so we went to get more lemonade and lunch. We wanted to leave a i early so we went to the vegan ice cream and since I shared a photo they h=gave me two free boxes and my friend didnt want hers so she gave it to me.We left and after that around dinner time my mom and went to Silvergreens to get salads!

Lentil Shepard Pie With Sweet Potato Mash

Hi there everyone! How have you all been? I have been doing well myself. I am very happy to say that school will be over soon so I will have a lot more time to work on my blog. Lately it has been cold all around the country even where I live in Southern California> So i wanted to make something warm and comforting but still healthy since I have been trying to eat well. I came up with some sort of sweet potato Shepard’s pie type thing. I looked high and low all over for a recipe and none of them sounded very goof. So i mixed multiple together and it was great! Very filling, warm, healthy, and cheap( don’t forget delicious!). This recipe requires very little prep work but it does take a long time to cook. And not all of my measurements are exact (sorry!) It was my first time making this. I will do my best to give to the perfect measurements. Now lets get to the recipe!


Recipe type:
Gluten free
Dairy Free



1 cup uncooked green lentils

3 very large cloves of garlic

1/2 a large onion or 1 small onion

4 cups of organic low sodium vegetable broth ( but start with about 2 3/4 and add as you go!)

4 tablespoons of marinara

2 teaspoons of balsamic vinegar

4 tablespoons of olive oil

1 1/2 teaspoons poultry seasoning (start with 1!)

1 1/2 teaspoons salt

1/2 teaspoon pepper


Middle layer:

12 oz bag of frozen veggies I used organic corn

Sweet potato mash:

4 medium sweet potatoes or 3 large 

3/4 tablespoons of olive oil

salt and pepper to taste



Peel and dice sweet potatoes in to 1 1/2 inch cubes

Add to boiling water and cook until very soft but still tender

Drain, and mash with olive oil and seasoning. ( I like mince clumpy )

Set aside

Dice your onion

Crush and finely chop your garlic

Saute the onion and garlic in the olive oil in a large pot until the onions are lightly browned and soft

Add 2 3/4 of the vegetable broth, lentils,  poultry seasoning, marinara, balsamic vinegar, salt,and pepper.

Bring to a boil then let simmer. This should take about 40 minutes but it may take more or less time. If then start to like dry add more vegetable broth.

Par cook your frozen veggies and drain.

Preheat your oven to 375 degrees.

When the lentils are done ( they should be tender and not too watery) transfer them to a baking pan/or a casserole dish.

Then top with the veggies

Finally top with the sweet potato mash.

Put in oven and bake for around 40 minutes or until the mash is firm.

My Favorite Vegetarian Foods.

Hi there! How have you all been? I have been good. I have been trying out new foods/ products. I have also been enjoying old ones! This blog post will include foods I really really love. Some of these products are just vegetarian and others are also vegan. Some are healthy some are not. I have been a vegetarian on and off multiple times since about 6th or 7th grade. But this time it feels permanent! Not all off these products are available everywhere but a lo of them are! If you have any awesome products for me to try leave them in the comment section! What are your favorite foods and personal care products?


Trader Joe’s Quinoa and Steel Cut Oats: This is a frozen item you can get it near the frozen fruits and other frozen breakfast items. I love to serve with topped with fresh strawberries and crisp apples from my local farmers market. ( Vegan )

Natures Path Organic Pumpkin Flax Granola: This can be bought most places including Trader Joe’s. It has Omega 3’s and a good amount of protein. I love this on top of non-fat yogurt and berries. It helps keep my full.It doesn’t have a ” fall ” taste but it is sweet and flavorful. It isn’t hard but it is crisp and have crunchy pumpkin seeds. ( Vegan )

Trader Joe’s Meatless Corn dogs: These are awesome! They taste just like a day at the fair! These are one of my favorite comfort foods. The brand MorningStar brand makes the same thing and they are just as good! They are found in the frozen section.

Trader Joe’s Reduced Guilt Macaroni and Cheese: Oh my God. This mac n cheese is AMAZING! I don’t go for low fat things but I tried this and I am glad I did! It is cheesy but not gloppy like the regular version. It can be found in the frozen section.

Rising Moon Organics Organic Spinach and Cheese Ravioli: This are really good with marinara sauce or olive oil and garlic. They are very filling! I got mine from the frozen section at Whole Foods. This brand also makes vegan items and the company is 100% vegetarian.

Wang Korea Crunchy Rice Snacks: These are one of my favorite snacks. They are sweet and crunchy. They also taste awesome with peanut butter!

South Coast Deli ( local restaurant ) Caprese Avocado Sandwich: This is so good! It has pesto, mozzarella, and tomato. I add avocado. This is a great, quick, and somewhat healthy. Its panini style.

The Habit Burger Grill Veggie burger Charburger Style: I take away the normal things and add cheese, mayo, pickles, and tomatoes on a seeded bun instead of whole wheat bun. this is one of my all time favorite veggie burgers! I get it with a chocolate malt ( no whipped cream ) and fries.


What I Eat In A Day ( Vegetarian!)

I recently decided to go vegetarian. I have been taking pictures of most of the food I eat. So this week I decided to take pictures of some of my meals and share them with you guys. It can be hard to think of new meals to eat, and how to use up leftovers but I’m going to show you how! There’s so much you can do with leftover things like potatoes, rice, and random condiments. For example I roasted some cauliflower in a homemade sauce and had it on naan bread and it was delish. I also really love cauliflower buffalo bites! I hope to show you guys some new meal ideas! Sunday 3/20/16


This is what I had for breakfast on Sunday morning! It is Trader Joes Frozen Quinoa and Steel Cut Oats. This is SO GOOD. All you have to do is microwave it/ or cook it in a little pan on the stove top and you are done. I went to the farmers market this weekend and since its springtime I got all kinds of yummy fruits. I added farm fresh strawberries and some crispy, sweet Apple. I washed this yummy breakfast down with a cup of Starbucks caramel k-cup coffee with a dash of milk.
Tuesday 3/22/16

On Tuesday I noticed I had a head of cauliflower, garlic naan bread, and stuff to make a sauce. I decided to roast the cauliflower in a sauce I made of olive oil, lemon, onion, garlic, salt, pepper, Basil, and tiny drops of Sriracha and Dijon mustard ( surprisingly good!) and blended it up. I roasted it until it got kind of charred and heated up my naan. I at it kind of like a burrito. ( sorry I don’t have a picture!) but it’s inspired but a hot for food recipe on YouTube.
Wednesday 3/23/16 

My boyfriend went to crushcake cafe ( a local bakery and cafe. They were on cupcake wars!) and got me a lemon cupcake ( one of my all time favorites since I was a child) because I was having a bad day! I also got my mom a strawberry blush mini cupcake. I got a lemon drop cupcake. It was SO good. It was lemon cake with lemon sour cream frosting and fresh lemon zest.

Thursday 3/24/16

Yesterday I went out to Your Cake Baker Inc. With my mom to get cupcakes. She got the strawberry cupcake and I decided to try the Bavarian cream stuffed cupcake. It was a white cupcake stuffed with Bavarian cream, Bavarian cream frosting, and a strawberry on top! Yum! It was amazing I really loved it.

Friday 3/25/16 

Today I had South Coast Deli  for lunch. I hadn’t eaten all day so I was starving. I had a pesto, mozzerella, tomato, and avocado panini. It was really yummy. Everyone that tried it loved it!
